Chambourcin, Johannes Seyve 26-205, is a relatively new French American variety. It is used as a
varietal wine and for blending. Chambourcin has moderate to dark color with cranberry, raspberry tones and
should be fermented on the skins. It has great body and deep color and character. It has the best
astringency and tannin of any hybrid we've had. It is a good blender. It will age very well
.
Sugars (brix) are moderate ranging from 18-21 with TA's from 09-1.2. Acid has to be managed. It is
moderately vigorous and is susceptible to powdery mildew, downy mildew and deer damage. It tends to over
crop and needs to be managed. Chambourcin is moderately hardy and ripens in early to mid October in central
NYS.
