Cabernet Sauvignon is one of the most widely grown wine grapes in the world. It produces a big powerful
dark red wine. This variety has been blended traditionally with Merlot and Cab Franc.
In the vineyard it is very tender for our cold climate area. It ripens later in October, which is a
concern for site selection and fruit quality.
Blending with other vinifera reds brings out the fruit and softens the tannins in this big Cab.
We lost most of our Cab Sauvignon in the agricultural disaster of 2004-2005 winter. The micro
climate is superior in certain vineyards on Seneca Lake for this tender variety, so we "import" Cab Sauvignon
for our customer needs. Cab Sauvignon is sold as a grape only, forcing the winemaker to make a bold red
Vinifera wine, rather than a lighter red from cold pressed grapes.
